The Mendoza Advantage
Fresh when
theirs is old.
The global olive oil market is dominated by Spain and Italy — but their harvest is October to December. By March, their "fresh" oil is already 5–6 months old.
Our harvest is May to July. We bottle in August. When you receive our oil in September, it is 6–8 weeks old — measurably richer in polyphenols, with lower acidity and a more vibrant flavour profile.
For premium HORECA clients and health-conscious consumers, this is the selling point.

Arbequina
Delicate · Fruity · Versatile
Originally from Catalonia, Spain, Arbequina produces a small, spherical fruit with exceptional sensory quality. The oil is smooth, fluid and extraordinarily fragrant — with characteristic aromas of white fruits, very low bitterness and mild spice. In Argentina's southern regions, it achieves a condition of excellence with high oleic acid and phenol content, great complexity and elegance.

Coratina
Intense · Potent · High Polyphenols
Italian variety originally from the Puglia region. Thanks to its extremely high polyphenol content, Coratina is generally used to enrich blends with other varieties — the classic 20% cut with Arbequina is legendary. The fruit is large and produces a potent, intensely bitter and spicy oil. Its vegetal and spiced aromas are characteristic and deliver excellent sensory results even in late harvests.

Arauco
Autochthonous · Bold · Argentina's Signature
Argentina's only native olive variety — considered the Malbec of olive oils. The fruit is large, oval-shaped and pointed, with an excellent pulp-to-pit ratio and outstanding flavour, texture, colour and aroma. Arauco oils are characteristically potent in bitterness and spice, deeply fruity with intense vegetal and mineral aromas. Always used in blends with softer varieties like Arbequina or Manzanilla.
